Ingredients of our tarte flambée bases

Our premium tarte flambée bases are made with flour from Alsace and a few select ingredients. As a supporting member of Slow Food Germany, it's a given that we avoid preservatives and flavor enhancers. Tarte flambée with or without yeast?

We don't use yeast in our dough. Yeast-free tarte flambée dough is more digestible and produces a lighter, crispier baked result.

Is there a gluten-free tarte flambée base?

All of the bases we currently offer contain gluten. Neither the wheat bases nor the spelt bases are gluten-free.

Freeze tarte flambée bases

For a longer shelf life, our tarte flambée bases can be frozen very well. They can be stored for up to 10 months. If they are then gently thawed in the refrigerator, ideally overnight, the high quality of the product is maintained. Vegan tarte flambée

All of our tarte flambée bases are vegan according to the recipe. They contain only flour, water, oil, and salt. A good tarte flambée dough needs nothing more. Whether the tarte flambée is vegan depends on the topping. For example, use a vegan cream or strained tomatoes and vegan ingredients for the topping to make a vegan tarte flambée.

Do not bake tarte flambée with fan

Tarte flambée should be baked using top/bottom heat, as they dry out when cooked using fan-assisted ovens. This results in a hard, rather than crispy, crust. Depending on your oven, it may be best to place the tarte flambée stone or baking sheet on the second rack from the bottom.

Optimal baking temperature

The recommended temperature for a stone oven is approximately 280 to 300°C. When using a household oven, use the maximum possible temperature (usually 250°C). Allow the oven to preheat thoroughly beforehand.

Is the release paper suitable as baking paper?

Tarte flambée is best baked directly on a baking stone. The paper would quickly brown in a stone oven and even catch fire in a wood-fired oven. Furthermore, the release paper is not entirely made of paper and can burn if exposed to excessive heat, negatively affecting the flavor of the tarte flambée.

Preparing the tarte flambée

Both theIngredients (cream and topping)The ingredients needed to make tarte flambée, as well as the tarte flambée itself, are easy to prepare. You can also spread and (partially) top the tarte flambée base about 20 minutes before baking. Only toppings with a high water content—such as tomatoes—should be placed on the tarte flambée shortly before baking, as otherwise the dough will soften and stick to the stone/sheet pan, potentially tearing.

Use frozen tarte flambée?

We generally advise against putting the tarte flambée bases in the oven from frozen. The baking results will be much better if the dough has been gently thawed beforehand. To do this, let the package thaw in the refrigerator overnight, or carefully remove individual bases and thaw them in the refrigerator. This allows the frozen water to redistribute evenly throughout the dough, allowing the dough to "relax," and ensuring the best baking results. If you are in a hurry, carefully remove the dough pieces one by one, place them on the baking tray, and let them thaw for a few minutes. Only then should you add the toppings to the tarte flambée.

Questions about ovens

Is an extractor hood necessary for baking tarte flambée?

The tarte flambée itself doesn't produce much smoke during baking. Smoke only occurs when ingredients touch the stone and burn. Therefore, installing an extractor hood isn't absolutely necessary. However, especially when working near the counter, it may still be advisable, as it can improve the overall air quality in the room.

Tarte flambée from the oven

An oven with firebrick is best. Whether it's heated electrically or with wood depends on your local conditions and your preferences. Regardless of the heating method, stone ovens reach the high temperatures ideal for baking tarte flambée, namely 280 to 300°C. However, good results can also be achieved in a household oven: either a tarte flambée stone or a standard baking sheet can be used. A baking temperature of at least 250°C is recommended.

Does smoke develop when baking tarte flambée?

The tarte flambée itself produces very little smoke during baking. However, avoid getting any toppings on the stone if possible. This will burn and can cause excessive smoke.

Spare parts for tarte flambée oven

You may need replacement parts for your oven. Replacement bulbs are the most common. New thermostats, rocker switches, or rotary knobs are also occasionally required. Transport to event locations or improper cleaning (note: the ovens must not be cleaned with water) can also damage the firebricks and require replacement. In rare cases, the doors or handles may also need to be replaced. New heating coils are required much less frequently. All necessary spare parts for the tarte flambée ovens are available. How do you make tarte flambée in a home oven?

You can also make good tarte flambée at home using your household oven. There are two ways to do this: You can bake the tarte flambée either on an existing baking tray or on a tarte flambée stone. This conducts the heat better than a tray and absorbs the liquid in the batter more effectively, resulting in a crispier baked result. The following applies to both options: The tray or the tarte flambée stone, placed on a wire rack, is placed in a cold oven on the middle or second-to-lowest rack and preheated to the highest setting (approx. 250°C). You can bake on the tray as soon as it reaches the right temperature, but you should preheat the stone for another ten to fifteen minutes to ensure it is thoroughly heated. The tarte flambée base is then baked without baking paper for five to eight minutes until golden brown. The tarte flambée is ready when the base no longer sags when lifted.

Prepare tarte flambée properly for baking

Tarte flambée is a dish that can be prepared quickly and easily with the right equipment and ingredients. All you need for a classic Tarte flambée is a high-quality pastry base, good cream, bacon, and onions. To prepare it, remove the tarte flambée base from the package and place it on a baking or preparation board without the release paper. Then spread it with the tarte flambée cream. It is important to leave a small edge free so that the cream does not run onto the stone or baking sheet and dirty it. The tarte flambée should then be covered evenly but not too generously with the prepared ingredients. Vegetables that take a long time to cook should be pre-cooked if necessary. Now, with a slight jerking motion, transfer the topped tarte flambée from the baking board to the well-preheated stone or baking sheet. After 3-5 minutes, depending on the temperature and oven, you can remove the finished tarte flambée using an oven peel. You can also use the oven peel to check whether the tarte flambée is done: When it no longer bends downwards on the sides of the peel but stands up nicely and has a delicious golden brown color, it's perfectly baked. Now cut the tarte flambée into manageable pieces on the tarte flambée board and enjoy.

Vegan tarte flambée topping

Preserving tarte flambée cream by freezing

The tarte flambée cream can be frozen without any problems. Ensure that there is at least two centimeters of air space between the cream and the lid. Containers should not be stacked during the freezing process – this allows the cream to expand optimally. Otherwise, the container may burst. Once the cream is completely frozen, the containers can easily be stacked to save space. You can also transfer the cream to a suitable container before freezing. Allow sufficient time for the cream to thaw. Place the cream in your cold storage or refrigerator for 1-2 days to thaw it gently. Never place it in warm water to speed up the process. Once the cream has thawed, stir it gently with a spoon or spatula (not a whisk) to ensure the frozen water is evenly distributed throughout the cream. Freezing will cause the cream to change its consistency slightly. It will become slightly softer, and tiny lumps of fat and protein may remain. However, this does not affect the flavor or the baking properties of the cream.

Unrefrigerated shipping in summer

Unrefrigerated shipping of the tarte flambée bases via UPS is also possible in summer, as no perishable ingredients are used in the tarte flambée dough. They consist exclusively of the respective flour, water, rapeseed oil, and salt. The tarte flambée doughs have a shelf life of ten days from dispatch. The standard shipping time is one to two days, so shelf life is not a concern—even in the height of summer. After delivery, you should refrigerate the bases and consume them within a few days, or freeze them for a shelf life of up to 10 months.

International delivery
