What is a pinsa?
Pinsa is an Italian specialty made from a special flour blend, a high water content, and a low fat content. The dough actually requires a long processing time and rigorous hand-rolling. The result is a very digestible product that's crispy on the outside and soft on the inside.

- The dough consists of three different, high-quality flours : wheat, rice and soy flour. Finely blended, a low-gluten Mixture with high water content without added animal fats.

Slow dough fermentation : The longer it rests, the more relaxed and lighter you feel. This is natural, and this also applies to our pinsa! That's why we let our Gourmet Pinsa rest for 24 hours to allow it to rise slowly. The use of sourdough and the long aging process also result in a crispy and light dough.
- The pinsa is famous for its narrow and oval shape , which favors a good release of excess moisture during the cooking process. The wavy surface is achieved by the pressure of the pinsaioli's fingers: the air bubbles keep the air in the dough and make the pinsa crispy and also very digestible !
