Ellermann-Spiegel Winery & “Maître Flambée” Flammkuchen24

Our shared history - two Palatinate natives combining “Flammkuchen & Wine” into a perfect symbiosis.

In 2012, as the founder & managing director of “Maître Flambée”, I had the pleasure of meeting Frank and Melanie Spiegel during my long search for an up-and-coming, as yet unknown South Palatinate winemaker to complement our catering wholesale business, and I was so enthusiastic about the wine and the winemaking family that we quickly formed a partnership.

The Flammerie concept & Ellermann-Spiegel wines

During this time, we developed a catering concept for restaurants that opened an authentic Flammkuchen restaurant—a Flammerie—using our own brand, “Maître Flambée.” In 2013, we opened the “Flammerie Graf Zeppelin” in Karlsruhe ourselves—as the flagship store for all future Flammerien in Germany.

The beginning of a long cooperation / Maître Flambée & Ellermann-Spiegel Winery

The 4 liter wines we originally planned to add from the Ellermann-Spiegel winery very quickly turned into 14 wines; the enthusiasm of our guests for these wines as the perfect accompaniment to a fresh “Maître Flambée” Flammkuchen was enormous.

In the years that followed, right up to the present day, we have gladly and with full conviction recommended the Ellermann-Spiegel winery to our customers in the Flammkuchen wholesale trade. Many have visited the winery, met Frank and Melanie—and have become wine customers themselves. The perfect symbiosis of premium Flammkuchen & wines from the house of Ellermann-Spiegel has continued with our customers—to this day.

In December 2025, we then added the wines from the Ellermann-Spiegel winery to our online shop www.flammkuchen24.de, including the liter wines, the heritage wines, and the Goldkapsel wines. Our shared journey to firmly anchor the “Flammkuchen & Wine” symbiosis in our business model is therefore continuing in the 20th year after our company foundation in 2007.

History: Both companies were founded 20 years ago

The beginnings of both companies, “Ellermann-Spiegel Winery & Maître Flambée Flammkuchen24,” go back to 2007 and will be 20 years old in 2026. This is another one of those wonderful stories that life writes.

The biography of winemaker & viticulture engineer Frank Spiegel

After graduating from high school, Frank Spiegel began an apprenticeship as a winemaker at the renowned Knipser winery and the Münzberg winery. His great talent was already evident here when he won a major wine tasting competition in Paris twice. After completing his apprenticeship, he went on to study viticulture, oenology, and cellar technology at the Geisenheim University of Applied Sciences. After a short detour for further training in Bordeaux, the Wachau, and Beaujolais, he joined his stepfather's wine business in 2007, which had previously been a purely cooperative operation. With a lot of hard work and a touch of Palatinate composure, success followed.

Ellermann-Spiegel Winery – one of the best winemakers in Germany

In 2015, Frank Spiegel was recognized by the magazine "Der Feinschmecker" as one of the best winemakers in Germany. The "Gault & Millau Weinguide Deutschland" also celebrated the young winery. In 2017, the "Meininger Red Wine Prize" went to the Pinot Noir Goldkapsel. Numerous other high awards and honors have followed to this day, including from Falstaff and Vinum.

Motto: “You’ve got to like it”

Frank Spiegel pursues a philosophy of seeing wine as an enjoyable companion, demystifying it, and striving for extraordinary quality, which is reflected in his slogan, "Dir muss ES schmecken" (You've got to like it).

One of Europe’s most modern wineries – Ellermann-Spiegel

A new chapter has now begun with the relocation to the new building in Kleinfischlingen. The winery has invested in a new, sustainable facility located in the middle of the vineyards of Kleinfischlingen, which is powered by its own electricity generation (solar).

A new era is now being ushered in at one of Europe's most modern wineries, combined with state-of-the-art production techniques for further quality improvement. You simply have to experience the accompanying "Windrose" vinotheque; it is already a magnet for visitors from near and far in the region.

Where on earth is Kleinfischlingen? It is located almost exactly next to Großfischlingen. Between Neustadt an der Weinstraße and Landau in the Southern Wine Route, Frank Spiegel continues to live and work with his family and team in his home village of 129 citizens in a happy village community.

Frank Spiegel has been a member of the Chaîne des Rôtisseurs and the Generation Riesling since 2009; he is a former soccer player, loves the Red Devils of FCK, hiking, wellness, and good food with harmonizing wines.
